Is there a way to add options, and reorder, the severity field?

Yes.  It's easiest to do so in 2.20; severities can be modified
through the Bugzilla web site when logged in with appropriate
privileges.  Otherwise, you'll have to modify the localconfig file
(located in the Bugzilla directory) and run checksetup to make the
changes.

If you choose to rename or delete severities, make sure that you
don't have any bugs with those severities or you'll get many complaints
from the Sanity Check.

   Good luck!

Thanks.

What about the status?
I'd like to add:
READY_FOR_TEST
FIXED_CRUDELY
etc

That's different.  It's not easy to do.  If you search
bugzilla.mozilla.org, or the previous posts to this newsgroup, you will
find a reference to the bug that is tracking the request for this
feature.

   Good luck!

It's also rarely a good idea. Adding a lot of statuses just tends to
confuse users and complicate the development process.

Statuses exist to be seen in buglists and searched on.

Note that you can also add the Status Whiteboard to your buglist, if
you'd like to use it for more detailed descriptions of your statuses.

Things like FIXED_CRUDELY, for example, are better done by marking the
current bug FIXED, and then opening a new bug for the more polished fix.
